White Vienna Kohlrabi is similar to Purple Vienna Kohlrabi, but with light green bulbs and green leaves. It is an ideal staple crop for cool-weather gardening, as it is one of the easiest and most productive cool-weather crops to grow. We recommend succession planting for continuous harvests throughout the fall and winter months. Plants grow to 12" tall and produce edible greens in addition to the beautiful bulbs.

The leaves taste similar to kale greens, while the bulbs provide a mild flavor that resembles a combination of turnip and cabbage. Bulbs grow above the soil and have a purple exterior with a white flesh. The texture is crunchy and is excellent prepared raw as a slaw or an addition to salads. Kohlrabi bulbs should be harvested at about 3" in diameter, or about the size of a tennis ball. Excess moisture should be monitored, as this can cause bulbs to split. Bulbs should be peeled before eating as the outside is tough and not palatable.

White Vienna Kohlrabi may be direct-seeded or transplanted, although we recommend transplanting. For direct-seeding, use a walk-behind planter like our Hoss Garden Seeder. Use a #1 seed plate with hole size modified to fit the seed. Thin to 8"-12" for optimal bulb production. Transplanting allows for more consistent plant spacing and prevents seedlings from competing with weeds in the early stages of the plant. We recommend starting transplants 3-4 weeks before the desired outdoor planting date. Kolhrabi transplants grow great in our heavy-duty seed starting trays, where they develop a solid root ball with roots that are trained to grow downward. Plants are ready to go in the ground when they can be easily pulled from the cells in the seed starting tray.
